¼ cup sugar
½ teaspoon vanilla

1.5 cups buttermilk
2 tablespoons melted butter
Process:
Mix dry and wet ingredients in separate bowls
Heat a saucepan to hot enough to fry an egg, add a little butter
Whisk together wet and dry ingredients while the pan heats
Crack an egg into the pan, let it sizzle just a moment and then add the batter in a ring around the yolk
When the bubbles in the batter soft closing, and before the yolk is cooked solid, flip.
Serve when cooked through with butter and jam or syrup
Repeat until batter is used up.
Variations
If you want to go gluten free, use 2 cups of acorn and no wheat flour. Add an extra egg to the batter to help bind it.
The batter also makes a lovely pancake on its own without the fried egg.
